Also great with chickpeas. Use any greens you have. Chicken thigh will be more tender and flavorful than breast, but use what you've got.

Any beans will do. Sub butternut squash fresh or frozen if you don't have sweet potatoes.
If you happen to have fresh or frozen shrimp, great! Sub cubed chicken breasts or thighs and cook for 10 minutes instead of 5.
